NY Culinary Experience 2010 – Brown Butter!
The last class I took was Brown Butter Desserts with Michael Laiskonis of Le Bernardin. He went a bit into the scientific explanation of the recipes and it was interesting to hear it from that perspective. We also learned to make Brown Butter ice cream and Financiers, both plain and pistachio. I was never a fan of Financiers at bakeries, but these fresh ones were SO good! Click below for more pics!
