Last NYWAFF Post – T Salon Tea Infusion Tapenade Class!

tclass.jpgT Salon is a tea shop and lounge in Chelsea Market which also serves tea infused food. It’s a large and open space, and I was interested to learn that their lovely light fixtures are made of used tea bags! But the point of this afternoon was to learn how to make tea infused tapenades and we were led in the process by the founder and CEO of T Salon, Miriam Novalle herself.

The class started with her pouring us all white wine cocktails with white tea, pomegranate, and ginger and regaling us with stories of her worldwide tea researching travels and behind the scenes dealings in the NYC food industry. Miriam is definitely a fun NYC character to listen to and at times had the class in stitches! In addition to getting background on T Salon we learned some interesting tea basics and then on to learning to make the tapenades. She matched black olives with black tea, green olives with green tea, etc. and they both came out delicious! She promised the recipes will be posted on the T Salon site, so keep an eye out for that.
